Cabernet Wine Vinegar?
It was on sale and bought a bottle for a basket to raise funds for my local Ladies Auxiliary does. Anyone who has good recipes using Cabernet Vinegar?
Great in salads and with this recipe: Porcini-crusted grouper with cabernet vinegar sauce Serves 4 4 – 8 oz servings black fillet 2 oz dried mushrooms 2 tablespoons vegetable oil (grapeseed, peanut or canola) 2 shallots, peeled and finely chopped 1 / 2 1 cup Cabernet / 2 cup vinegar the Cabernet 1 / 2 pound butter 1 pound or relic red potatoes (small and mixed) 4 cloves garlic 1 stick butter, at room temperature, cut into pieces salt and (many) of freshly ground pepper steak Spread the crust dried mushrooms in a baking tray and dry further in a 250 degree oven for 15 minutes or until brittle. Cool and grind to a fine powder in blender. On one side. In a nonreactive saucepan, combine shallots and red wine, along with a good pinch of salt. Bring to the boil and reduce to about 2 tablespoons remain. Cabernet Add vinegar and reduce again until almost dry (about 1-2 tablespoons). Remove from the heat for a moment. Return skillet to low heat and begin adding a tablespoon of butter at a time, beating constantly. Season and set aside. Cook peeled potatoes and garlic in a large pot boiling salted water until tender, about 25 minutes. Drain well. Return potatoes and garlic to the pot. Using a handheld electric mixer, beat potato mixture to low speed until smooth. Add butter, beat until melted and smooth. Increase speed and whip the potatoes just until light and fluffy. Add 1 / 5 cup of milk if you want to mash, like halibut fillets release consistency with porcini powder fresly ground pepper and salt mixture. Sear steak in oil in a heavy saute pan hot. Put the pan in the oven and finish about 5 to 7 minutes. Remove fish from oven and plate over the potatoes and sauce. Seasonal vegetables steamed as spinach, peas, spinach or asparagus are recommended as accompaniment.
