What is the ideal amount of head (of beer)?
I am a bartender and have found many people with different opinions – and I am curious see what people here think. This refers to the draft beer (ie tap a barrel) which is poured into a standard size glass. For me, in Australia, a 425ml schooner, but just think of it as a pint if it is more familiar. Remember that the employer is paying for the crystal size as well. The differences between the types of beer are welcome, but let's keep this in reference to Lager, Pale Ale, and the like – obviously Guinness, as are a different matter entirely. Just for reference, the most frequently beers Tooheys New Project pour Carlton, Tooheys Extra Dry, Heinekin, Project Boags, Hahn Super Dry, Beck and James Squire Amber Ale. Thank you!
